As you will be aware, if your company is involved in handling, selling or providing food and drink you have a responsability to implement food safety standards that comply with the law and safeguard the health of your customers.

  • Auditing Service: preparing for your visit from the local authority Environmental Health Officer to advise you on all aspects of food safety. Our visit starts with an inspection of the premises in order to identify any physical or operational contraventions of legislation or good practice. This is followed by an audit of the food hygiene on cleanliness of food rooms, condition and cleanliness of equipment, temperature surveys, cleaning schedules, Hazard Analysis Critical Control Points (HACCP), bacteriological sampling.

  • HACCP-Hazard Analysis Critical Control Points: any food business that wishes to comply with the Food Hygiene (Scotland) Regulations 2006 needs to have a HACCP system (Hazard Analysis Critical Control Point) in place. You must be able to demonstrate to the Environmental Health Officer that you have studied the high risk foods that you prepare and serve and have identified the Critical Control Points (CCPs).ScientiaLex can work with you to develop the HACCP system that is most appropriate to your needs as well as produce monitoring documentation for the Critical Control Points.
  • CookSafe: The Food Standards Agency Scotland launched CookSafe which is a free Food Safety Management System (FSMS) that is specifically aimed to support smaller caterers and retailers to meet the legal requirement to have a documented FSMS based on the principles of HACCP. If you are a small catering or retail operation and you need help and guidance to complete and tailor the pack, we can help.
  • Consultancy: Advice and interpretation of legal requirements. We are experts in offering consultancy services to the hospitality industry: Hotels, Pubs and Restaurants, Cafes and B&Bs.
